Today’s recipe is a guest blog from Jessica Derby whose blog In The Nom of the Father is all about food – great recipes, restaurant reviews and just general foodiness!   I really love this dish for its ease and nomness!  My sister in law Emma cooked it one evening a few years back and I’ve been cooking it regularly ever since.  It’s great served with a big green salad, crusty bread and a glass of chilled Two Oceans Pinot Grigio.   Serves 4 Ingredients 6 large rooster potatoes, washed, skins left on. 12 shallots.  Skinned but be careful to keep them intact.
